Gula Melaka is a type of palm sugar made from the sap of flower buds from the coconut palm. Gula Melaka can come in a form of liquid or solidified shape.
Quality Gula Melaka tends to be darker in colour, smells strongly of smokey caramel/coffee, crumbles easily and is pricier. At its purest, it is not as sweet as cane sugar due to their naturally low glycemic index. Some even have bitter or savoury notes.
