Gula Melaka is a type of palm sugar made from the sap of flower buds from the coconut palm. Gula Melaka can come in the form of liquid or solidified shape.
Quality Gula Melaka tends to be darker in colour, smells strongly of smokey caramel/coffee, crumbles easily and is pricier. At its purest, it is not as sweet as cane sugar due to its naturally low glycemic index. Some even have bitter or savoury notes.
